Tasting Notes

Gevrey Chambertin is the most Northern of the great communes of the Côte de Nuits. The single vineyard Combe au Moine is situated on a South-East exposed slope, near the cazetiers. Bright red edges with a darker core. A powerful nose of black cherry and clove spice, evolving towards aroma of new leather and game meat. On the palate the tannins give a firmness to the finish, but there is some velvety black fruit texture softening these. Powerful yet silky.

Sustainable agriculture. Handpicked with strict grape sorting in the vineyard and at the winery. Destemmed. Fermentation for 15 days in stainless steel tank, no pigeage, pumping over twice a day until the end of fermentation. 15 months in oak; 15% new barrel. Bottled unfiltered. - Winery Note
